Peanut roasting

We are in the lengthy process of organic certification and will be growing peanuts (we grew a heritage variety this year with good results) as well as several other crops. To that end, we are investigating roasting our own peanuts for sale in our local brewery (where we are welcomed).

What technical issues should we be addressing as far as peanut roasting is concerned?

Lee , thanks for the email. I don’t have much personal experience in roasting peanuts, however, I do not believe it to be much different than roasting any other type of seed/bean such as coffee or cacao. It’s a matter of time and temperature. When you’ve dialed in the right temperature the roasting should go off completely without issue. Hope that helps.
